My Chocolate Chip Cookies

Preheat Oven 180C fan

In a large bowl mix together the dry ingredients - 

  • 65g granulated sugar
  • 100 g light brown sugar
  • 1/2 tsp salt
  • 150g plain flour
  • 25g self-rising flour
  • 20g bread flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda (bicarbonate of soda)

mix dry ingredients, then add butter and egg and vanilla

  • 90g softened butter
  • 1 egg
  • 1.5 heaping tsp vanilla (or if measure precisely, 2 tsp)

mix all together until it sticks together and to the mixer, should seem dry, then add 2 large handfuls chocolate chips

  • chocolate chips - 1 handful dark choc and 1 handful milk choc

Bake on 180C fan for 8-9 minutes



Myla's Ginger Snap Cookies

 3/4 cup butter, softened

1 cup sugar

1/4 cup molasses

1 egg

2 teaspoons baking soda

2 cups flour

1/2 teaspoon ground cloves

2 teaspoons cinnamon

1/2 teaspoon salt

4 oz. Crystallized ginger, chopped coarsely


Preheat oven to 375 degrees Fahrenheit.

Combine softened butter, sugar, molasses and egg, and beat well.

Mix dry ingredients together and add to web mixture. Mix well. Chill for 1 hour.

Form into 1" balls, roll in sugar, place on greased cookie sheet 2" apart, bake for 8-10 minutes.

Makes 36 small cookies.
