Sweet Potato Casserole

Sweet Potatoes
3 c. cooked mashed sweet potatoes
1/2 c. brown sugar
2 eggs, well beaten
1/2 c. margarine, melted
1 tsp. vanilla
1/3 c. milk

Combine all of the above. Spoon into a 2 qt. dish.

Pecan Topping
1/2 c. brown sugar
1/4 c. flour
2.5 Tblsp. melted margarine
1/2 c. chopped pecans

Combine all of the above. Sprinkle on top of potato mixture BEFORE baking.

Bake at 350 degrees for 30 minutes.

Last few minutes- add mini marshmallows on top. Broil for 2-5 minutes until marshmallows brown. Make sure you leave the oven door slightly open! WATCH the marshmallows, or you might get fire!

Sweet Potato Pancakes

1/2 cup cooked and mashed sweet potato
2 eggs
1/4 cup almond flour
1/8 tsp baking soda
1/8 tsp baking powder
1 tsp honey or coconut palm sugar
1/8 tsp ground cinnamon
pinch salt
milk to thin batter if necessary

Mix well. Pour batter on hot skillet. Cook like normal pancakes (note: they won't bubble when done)

Oatmeal Almond Berry Pancakes

3/4 cup almond milk
1 tsp vanilla extract
1/2 cup almond flour
1 tsp baking powder
1/2 cup rolled or old-fashioned oats
1 tbsp birch xylitol (or stevia)
2 tbsp olive oil
1/2 tsp sea salt
1/2 tsp baking soda
1 large egg
2 cups blueberries

Place all ingredients into blender/bowl and blend until smooth.
Lightly oil a griddle and heat. Pour batter for each pancake and add blueberries. Cook about 1 minute on each side.

Baked Cashew Chicken

1 pound boneless, skinless chicken breasts
1/2 cup ground cashews
2 tablespoons diced onions
1 tablespoon coconut oil
1 tablespoon cashew butter
1 teaspoon fresh lemon juice
1 teaspoon sea salt
1 teaspoon fresh thyme leaves or 1/4 teaspoon dried thyme
1 teaspoon chopped fresh cilantro or 1/4 teaspoon dried cilantro

Preheat the oven to 375 degrees
Put the chicken in a single layer into baking pan
In a small bowl, combine the remaining ingredients and spread over the chicken
Cover with aluminum foil and bake for 30-40 minutes

Swedish Chocolate Balls (Chokladbollar)

3.25 cups oats
1.25 cups sugar
6 tablespoons cocoa
1 tablespoon vanilla sugar or 1 tsp vanilla extract
2/3 cup butter
6 tablespoons cold coffee (or alcohol)
flake coconut (to add to the outside)

Mix dry ingredients, then add liquid ingredients, mix together, roll into balls, add coconut, let refrigerate
